Hal Smith Restaurants (formerly Hal Smith Restaurant Group) has lost some long-time proprietors in the last year, and two of them will open a new place together one month from today.

Former Mahogany proprietors Jason Pool and Dave Osborn followed former longtime HSR exec Ross Crain in the exodus, but Pool and Osborn have partnered on a new concept called Symmetry. Operating under the banner of Empire Hospitality, Symmetry will open Nov. 6.

Executive Chef Glenn Scott brings 22 years of experience to the kitchen. He counts “French, Korean, Indian, Italian, Spanish, Mediterranean, and German” cuisines among his influences. Scott will oversee a menu that promises to be long an elegance with no shortage of ambition thanks to the chefs who mentored him along the way. Chefs like Melodie Franczek, Jim Henning, Carlos Martinez, Brad Johnson, and Jonathon Stranger.

“It really is the experiences you live through and the lives you touch along the way that channel the passion needed for this industry,” Scott explained. “I can't wait to see what new things we'll learn and new faces we'll meet along the way.”

Symmetry takes over a turn-key space that operated as The Vault for about six months. The long-time Naifeh’s Jewelry space is decked out for intimate dining, large private events and an inviting bar. Leaning into the space’s jewelry heritage, Symmetry is a reference to the quality of a gemstone’s facets.

The new restaurant will be open Monday through Saturday for dinner only to start. The bar opens at 4 p.m. with dinner service operating 5 to 10 p.m. Good news, Symmetry is accepting reservations now.
